Pot roast isn t really a specific recipe or cut of meat it s more of a method. Instead of braising it on the stove place the seared roast in a covered heavy skillet with a small amount of beef stock and roast it in a 300 degree oven for about an hour per pound. While outdoor grilling calls for the choicest and most expensive cuts of beef you can make a fabulous pot roast out of the cheapest toughest cut of meat. The bottom round roast is typically used for roast beef but can make an excellent pot roast.
Nice chuck roast is the classic choice for pot roasts but there are other cuts you can use to achieve an exceptional roast.
