What is the difference between scallions and green onions. Scallions are younger than green onions harvested at an earlier stage of their growth. Scallions do not produce a bulb as they grow and therefore look like very small and immature green onions. The white stalk has the same sharp sulfur y taste characteristic to all alliums albeit with less bite while the dark green leaves have a fresher grassy flavor.
Scallions and onions have varying species but both came from the genus allium. They are either harvested very young from the regular bulb forming onions we are familiar with or they can come from other varieties that actually never form bulbs. You can tell them apart by the width. They re sweeter and mellower than scallions but the green parts are much more intense in flavour.
Scallion is the term for an onion harvested early on in the life cycle before the bulb begins to swell. They re harvested from bulb growing onion varieties or as scallions left to mature. They have long hollow green stalks and a small white stems. Green onions and scallions are actually the same thing.

What s the difference between scallions and green onions. Planted in the late fall and harvested the following spring they come in either red or white. Green onions and scallions come from the same onion species while chives are considered an herb and come from a different species of plant. The terms are used interchangeably and scallions spring onions and green onions can be substituted in recipes without issue.
Scallions are smaller than onions and are not dependent to bulb before being harvested unlike the regular onion. Chives have a bright mild flavor and are a favorite topping for hearty breakfasts like a ham and swiss omelet or simple appetizers like deviled eggs. Scallions and onions are used a lot in cooking for various dishes around the globe. You can discern scallions from other types because the white base of each bunch is slim and blends uniformly with the green stalk.
Both have a more mild taste than regular onions. But if a green onion is an allium cepa then it might have a stronger taste than a scallion this is the only difference you might notice while cooking. Like scallions all of the spring onion is edible.
