Jelly jams and preserves contain different amounts of fruit and sugar and have very distinctive textures.
Preserves take things a step further than even jam suspending fruit within the sugar pectin cooked fruit mixture before it has had time to chill. For the longest time i thought that if mashed up cooked fruit came in a jar it was essentially all the. Jelly has the smoothest consistency and is made by crushing a fruit and discarding the solid chunky leftovers. This makes jam less stiff than jelly.
