Digestive enzymes is a broad term that includes pancreatic enzymes plant derived enzymes and fungal derived enzymes. First the hydrochloric acid and a group of enzymes called proteases break it down into chains of amino acids that are much smaller.

Protein digestion begins when you first start chewing. Pepsin powerful enzyme in gastric juice that digests proteins such as those in meat seeds and dairy products. They mostly break down carbohydrates and fats. Pepsinogen is converted to pepsin by the action of stomach acid.

Of these enzymes the most abundant one is called pepsin. The enzymes in the mouth and stomach include amylase lipase and pepsin and each is responsible for helping to start the digestion process for carbohydrates fat and protein. Pepsin is the mature active form of pepsinogen which is released into the stomach and mixed with hydrochloric acid to produce pepsin. Since stomach wall is made of protein why is it not digested too.
